Brother Ham’s Tarte Tartin

Love having a chef in the family! This was recently made for a family get together on a cold winter’s day in the Southern Highlands…..even after multiple courses of winter nosh, the warm toffee apple slices slipped down super sweetly. Make it and weep the good stuff.


1 block of butter at room temperature

250 grams white sugar

4 apples halved and cored

1 vanilla bean (knife in two lengthwise and de-seed)

2 star anise

Puff pastry – cheat, its easer (suggested puff pasty is Carême)


Method to the goodness

1. Grab an oven proof frying pan roughly 25cm diameter

2. Pound the butter into its base for an even coat

3. Make a cross with the vanilla beans and place on top of the butter with the star anise

4. Sprinkle the sugar over the butter, vanilla beans and star anise

5. Arrange the apples core side up on top of the butter/sugar around the pan

6. Wack it on the stove and bring to the boil, then let it simmer with vigour until the sugar melts and caramelises in with the butter, it will turn a lovely golden colour

7. When the sugar is dissolved and it takes on the gorgeous deep caramel colour, turn off the heat and let it sit

8. Pre-heat your oven to 180 degrees

9. Cut a circle out of the puff pastry the same size as the rim of the pan

10. Place the pastry on top of the warm apple and tuck the edges of the pastry under the apple

11. When the oven gets to temperature, pop your Tarte Tartin on the top rack of your oven for about 20 minutes, check after about 12 minutes and spin it around for good measure 

12. Bring out of the oven when golden

13. Place a serving plate over the pan and with haste – flip it!

14. Cut into generous wedges and serve

Perfect matches? Double cream or vanilla ice-cream.
